This week's links are for green cabbage. Cabbage may seem pretty ordinary but
like many things in life there’re hidden depths to those crunchy green
leaves.
Cabbage is a cruciferous veggie and like its cousins
(broccoli, cauliflower, mustard, radish, etc.) it’s packed with
serious nutrition. It keeps for a long time but it’s sweetest when
it’s fresh and young. This time of year our favorite way to fix it is
coleslaw but there’s so much more that can be done! Cooking in water
for 30 minutes or so with a little oil or seasoning meat yields tender
flesh and cuts down on the sulfur compounds that rile up some people’s
guts.
Here're some great recipe links . Share your favorites with us so we can spread the word!

Delicious deliveries complete
Photo:
Green onions, tomato & leafy greens; USDA
Agricultural
Delivery three of six in Summer cycle two finished as
scheduled. Sadly the chickens are still on strike so no eggs this
week. We promise to make it up to our egg shareholders! Weekly and odd-week
produce shareholders got delicious delicacies
and Summer favorites:
· Yellow squash mix (regular & gourmet baby) · Zucchini
squash
· Okra
· Kentucky
pole beans · Pepper
mix (Cubanelle & Jalapeno)
· Spring
onions · Gala
apples
Our focus this week is on green onions. These can either be very young
sprouts of regular bulb style onions (like the Vidalia green onions we
sent you this Spring) or bunch-type onions that never make bulbs. To
confuse things even more, as a group they're known a scallions, and
there's also a type that's called scallion. Other types are spring
onions (the young bulb onions), green onions (the bunchers) and young
leeks. Young leeks have the mildest flavor, scallions and bunchers the
mid-range, and spring onions the sharpest. Usually any of them can be
swapped for any other so long as you adjust the quantity, but always
check the recipe to be sure. And of course, your and your family's tastes
are the best guide!
Here're some great green onion recipes for you to try. Share your favorites with us so we can spread the word!
